So the perfect drink for Christmas guests to warm up as they arrive…a little calorific perhaps but they can always burn it off in the New Year! This is a traditional recipe that’s bound to go down a treat.
12 (separated) eggs
1.5 litres milk
500ml thick cream
500ml bourbon
300g sugar
60ml brandy
2 teaspoons ground nutmeg
Serves around 8.
In a large bowl and using a mixer, beat the egg yolks together with the sugar for approximately 10 minutes until the mixture is butter-coloured and firm.
Very slowly, add in the brandy and the bourbon, just a little bit at a time.
When the brandy and bourbon have been added, allow the mixture to cool in the fridge (for up to 6 hours, depending on how long before it’s required.
30 minutes before your guests arrive, stir the milk into the chilled yolk mixture.
Stir in 1+ ½ teaspoons ground of nutmeg.
In a separate bowl, beat the cream with an electric mixer on high speed until the cream holds it’s own shape.
In yet another bowl, beat the egg whites until stiff peaks form.
Gently fold the egg white mixture into the egg yolk mixture.
Gently fold the cream into the egg mixture.
After ladling into cups, garnish with the rest of the ground nutmeg.
